This recipe makes around 56 cannabis infused gummies – final # depends on how clean you scrape the mixture pan into the squeeze bottle and how clean you pour the mixture into the molds.
THC mg % of your gummies depends on the amount and potency of the dispensary-bought oil.
Requires 2 stove burners to use at same time.
1) Lightly spray with non-stick spray: gummy molds, gelatin pan, inside squeeze bottle
2) Measure 1 tablespoon Soy Lecithin Powder, set aside until step 2A
3) In a medium stainless steel saucepan, no heat, dry mix (1) 3oz box flavored Jell-O and 1 TSP Knox brand unflavored gelatin
Place quart size double boiler, with bottom part filled partially with tap water, over medium-low heat.
Add 1/4 cup coconut oil (I always add a little more than 1/4 cup just to make sure I end up with 1/4 after what may stick to side of boiler).
Completely melt and pour 1/4 of the coconut oil into measuring cup, set aside until step 2.
Use spatula to wipe out double boiler and discard extra oil into garbage – I never pour oil into my sink drain.
Place double boiler back on low heat.
Pour in pre-measured 1/4 cup coconut oil, pre-measured 1 TBSP sunflower lecithin and syringes of cannabis oil (how many and of what potency determines the THC mg # for each gummy).
Gently mix with whisk until the lecithin granules are completely dissolved – around 12 mins.
When granules in STEP II are about 90% dissolved, begin:
Add 1/4 cup water to your pre-mixed Jello and Knox. Turn on low heat. Gently whisk until powders are dissolved and mixture gets hot.
Turn heat up slightly to Medium-Low for a short time if necessary to get mixture nice and hot, but not boiling.
When both the oil is ready and gelatin hot, turn heat OFF on Jello/Knox.
Carefully pour water out of oil boiler bottom and set aside bottom half – you are now done with that piece of hardware.
Move Jello/Knox to oil double-boiler LOW heat.
Slow drip pour oil into gelatin while whisking. Use rubber spatula to get all the oil out of double boiler and into the Jello/Knox.
You are now done with the double boiler.
Heat still on LOW, gently whisk oil/jello mixture while adding into 7 TBSP raw sugar 1 TBSP at a time.
Stop mixing when sugar is completely added and dissolved. Mixture will thicken.
I experimented with many kitchen cups, measurements and containers – anything to most cleanly transfer ready gummy mixture from stove cooking pan into mold spaces.
This has been the best way for me:
Put the small funnel in a plastic 12oz squeeze bottle and carefully pour the gelatin mixture through the funnel into a squeeze bottle.
Carefully or with someone’s help, use a spatula to scrape the bowl and get as much of the gummy mixture into the funnel and the squeeze bottle.
I wear a glove to handle the hot squeeze bottle.
Before pouring, I put each silicone mold tray in a Rubbermaid freezer container.
I do this so there is no reason to move the molds after pouring in the gelatin mixture.
Carefully and slowly pour the mixture from the squeeze bottle into silicone mold trays, going slowly to fill each mold space to the top.
Pause briefly between cavities to move to the next one without spillage.
Snap tight container lids and put in freezer.
After up to 24 hours, remove Rubbermaid containers from freezer, remove gummy molds, push out gummies from back.
Lightly dust gummies with powdered sugar to further improve taste and prevent gummies from sticking together.
Store in air tight container (jar) in refrigerator until ready to eat.
Your end result, should be a tray of medicine and happiness.
